Bee-yond the Basics: Building Busy Bodies - Three Lessons in an Online Course

"Bee-yond the Basics", is a nutrition education course developed just for child care providers! The lessons will help you understand key recommendations of the Dietary Guidelines for Americans and provide practical ways to create healthier meals and snacks. You will also learn about common concerns with feeding young children and how you can make a positive difference to help children learn to eat well!

This online course is comprised of three individual lessons and quizzes. Child care providers can earn credit hours for successful completion of each individual lesson and quiz. Because the lessons are accessible through internet access you may view them at your convenience and at any time! Each lesson also has downloadable handouts that are valuable resources for supplementing the lessons and providing you with further resources.

The Chat and Play Café    Available on DVD!
This training DVD will take you on a CACFP adventure to our imaginary restaurant called, the Chat and Play Café. Our specials of the day will expand your ideas for fast food through healthy lunches in a crunch. Also featured will be samples of portion distortion as you learn, “what really is a CACFP serving?” The cuisine will be juicy as we season it with sprinkles of the latest small town gossip. You won’t want to miss that course as we chat our way through current CACFP regulations and rumors. Lastly enjoy our child friendly atmosphere. We’ll help you experience the rich taste of combining food and fun through creative paper play, a course just for kids.

The Whole Grain Truth     Also available electronically!
Common label terms such as multi-grain, made with 100% wheat or made with whole grains may not be all they are cracked up to be. Choosing healthful whole grain products will now become easier as you learn "the whole grain truth". This lesson will help you sort the wheat from the chaff as you learn what comprises a whole grain and how to sift through the label lingo. The whole grain truth will help you realize the nutritional benefits of whole grains and supply you with easy solutions to boost them in child care menus.

Fit Kids = Happy Kids     Also available electronically!
The food and physical activity choices you make every day affect your health and well being. Your choices also affect the children in your care. Eating right and being physically active aren't just a "diet" or a "program" - they are keys to a healthy lifestyle.

More than ever kids today need nurturing to foster healthy habits that will last them a lifetime! You can be a model of healthy habits that kids need to learn.  Fit Kids = Happy Kids will supply you with simple steps to lifestyle practices that will foster a healthy weight in kids. The sooner you start, the better for you, your kids, and the future.

Serving It Safe     Also available electronically!
What comes to mind when you think of a clean kitchen? Shiny waxed floors? Gleaming stainless steel sinks? Spotless counters and neatly arranged cupboards? They can help, but a truly “clean” kitchen—that is, one that ensures safe food—relies on more than just looks, it also depends on safe food practices. This Learn-at-Home Lesson provides a guide to safe food handling. Learn how you can do your part to Serving It Safe!


How to Obtain Learn-At-Home Lessons

• Send an e-mail to ndc@minot.com to request the lesson of your choice. List your name, address, and lesson of choice.

• There is no charge for the Learn-at-Home Lessons. Child care providers are responsible to return materials to the NDC office after their use. A two week loan period for one lesson will be granted subject to availability. Extensions of a Learn-at-Home Lesson may be granted; contact the NDC office to inquire.

• NDC recommends childcare providers check with their licenser prior to using the lesson when needed for licensing credits. There is a limit to this method of training for licensing credits. Final approval is subject to your county licenser. NDC will issue a certificate upon successful completion of the lesson. Successful completion of a lesson will result in one hour of food program credit.
